Omelette with French-Fried Cheese

Method

Make batter No. 1. Cut Emmentaler, or Cheddar, into ½-inch-square strips 2 inches long. Dip cheese into batter and French-fry in oil heated to 400 degrees. Lay a strip of cooked cheese in each omelette and then fold. These are delicious! Cheese may also be cooked like Beurre Frit.
