Grillé à la Marinade

Grilled-Marinated Fish Steaks

  • 2 pounds of steaks (halibut, salmon, or swordfish)
  • Juice of 1 lemon
  • ½ cup vegetable oil
  • 1 tablespoon chopped parsley
  • 1 teaspoon chopped chives
  • 1 clove garlic, cut in half
  • 1 onion or shallot, minced

  1. Put fish in a flat glass dish, just large enough to hold the steaks. Put remainder of ingredients over fish. Marinate about 1 hour. Turn and baste often.
  2. When ready to cook, place steaks in hot greased hinged wire grill, or on preheated greased broiler. Grill about 5 minutes per side, or broil a total of about 8 minutes. Baste with marinade as they cook. It is not necessary to turn the steaks being broiled.
