Veal Rolls with Sautéed Artichokes

Method

Make Paupiettes Côte d’Azur, but omit olive and mushroom garnish. Fill 6 sautéed artichoke bottoms with Duxelles. Top artichokes with cooked paupiettes, glaze with sauce, and sprinkle with parsley. Serve remainder of sauce separately.
