The Bleu cheese of this area is famous, and so it is only natural that here one finds a Bleu cheese dressing served on salad. This fact, no doubt, will disillusion many of us who have always thought this dressing to be an American contribution to the world of food.

Ingredients

  • 1 clove garlic
  • teaspoon salt
  • Freshly ground pepper

Method

  1. Mash garlic to a pulp in a salad bowl. Add salt (remember the cheese is salty), pepper, and vinegar. Continue to mash the garlic. Add lemon rind, Madeira, and mayonnaise.
