  • 6 medium-sized red potatoes
  • Salted water
  • Melted butter
  • Pepper


  1. Boil potatoes in their skins in salted water for 25 minutes or until done. Drain, cut in half lengthwise, and make a cut down the middle, but not through the skin.
  2. Put potato halves onto broiler rack. Spoon melted butter over potatoes and grind pepper over each half. Broil until brown. Arrange on platter with chicken.
