Mash garlic in salad bowl with salad spoon. Add salt and pepper and continue to mash.
Cut crusts from bread slice. Tear bread into small pieces. Mash half of the bread into the mashed garlic. Add oil, vinegar and basil to the bowl. Mix together. Let stand for an hour or so to age.
