Frizzy-Green Salad


  • 1 clove garlic
  • ⅛ teaspoon salt
  • Freshly ground pepper
  • 1 slice bread
  • 4 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • ½ teaspoon sweet basil
  • Curly endive
  • Romaine
  • Leaf lettuce


  1. Mash garlic in salad bowl with salad spoon. Add salt and pepper and continue to mash.
  2. Cut crusts from bread slice. Tear bread into small pieces. Mash half of the bread into the mashed garlic. Add oil, vinegar and basil to the bowl. Mix together. Let stand for an hour or so to age.
  3. Add greens to serve 6. Sprinkle with remaining bread pieces. Toss and serve.
