Sauce Gaillarde

Seasoned Mayonnaise

Ingredients

  • cups mayonnaise
  • 1 shallot, minced
  • 1 teaspoon minced onions
  • 4 teaspoons whipping cream
  • 1 teaspoon lemon juice
  • ½ teaspoon dried chervil
  • 1 tablespoon minced parsley
  • 1 teaspoon sugar
  • 1 teaspoon Dijon-type mustard
  • 1 teaspoon Madeira
  • 1 teaspoon Calvados or brandy

Method

Mix all ingredients together. Age several hours, or overnight. Serve with any French-fried meat, poultry, seafood, or vegetable.
