  • ½–1 fresh red chilli (according to size and taste)

Peel and chop the garlic, and deseed and chop the red chilli pepper as finely as you can. Pour the olive oil into a wide, thick-bottomed pan. Then add the chilli and garlic and, on a moderate to low heat, to infuse rather than to colour, fry for 2 minutes, stirring all the time.
