  • 2 racks lamb
  • 1 scant tablespoon chilli oil
  • ½ tablespoon

Method

Preheat the oven to gas mark 8/220°C.

Mix the oil and cinnamon to a paste and rub over the meat. Place on a rack over a baking tin and cook for about 30 minutes. The skin should be conker-shiny and the meat within pink and tender. Let stand for 5 minutes or so before serving. T
