I first ate this at one of Vatcharin Bhumichitr’s restaurants, Southeast W9, and found it spectacular. It’s again an example of how the best low-fat food comes from recipes that are not specially adapted to make them so. My version is a slightly anglicised take on the recipe for plea saj go as gratefully found in Vatch’s wonderful South-east Asian Cookbook. I have reduced the number of chillies, used shallot in preference to onion and as Vatch himself suggests, substituted min
