The dressings, above, are runny and good for the robuster leaf salads – radicchio, frisée or something with bite. This, though, is rich and thick and wonderful stirred into warm or cold pulses.
In a little bowl, stir together the miso, balsamic or rice vinegar, and a tiny drop or two of sesame oil and mix to the consistency of a thick paste or dressing by adding a couple of tablespoons of water.
