This is a great base recipe that can be adapted in many ways. Try swapping out a cinnamon stick for the vanilla, or add ½ tsp ground cinnamon, ¼ tsp ginger, ¼ tsp nutmeg, and ¼ tsp cloves. It also works well with pears or peeled quince in place of the apples.

Ingredients

  • 8 apples, anything but Fuji
  • 2 cups/480 ml water

Method

  1. Preheat your oven to 350°F/180°C. Peel, core, and cut the apples into eighths.
  2. Combine the apples, water, sugar, salt, vanilla bean, and lemon juice in an ovenproof sauté pan and cook over medium-high heat, covered, until the apples are very soft, about 15 minutes.
