This tart is also really delicious with blood oranges, Meyer lemon, or any citrus you find at your farmers’ market. When I’m not in the mood for grapefruit, I particularly like it with Cara Cara oranges, because they have the sweetness of an orange and the wonderful acidity of a grapefruit. If you have a nut allergy, feel free to omit the almonds; they are totally not necessary, but their crispy fattiness cuts through the sweet-and-sourness of the tart beautifully.
