It took me a long time to figure out how to make a good cake doughnut—I’m almost embarrassed to say how long. I found the two most important things to be almost undermixing your batter and the addition of cream cheese.

During the winter we also make a spiced version of these. Simply add 2 tsp cinnamon, 1 tsp nutmeg, ½ tsp cloves, and ¼ tsp ginger to the batter. When the doughnuts are done, coat them in a mixture of 2 cups/400
