I grew up loving beignets. There was a place in the bowling alley by my house called Café Beignet, where every table started their meal with a huge basket of them. I vividly remember the beignets being so hot you’d pull your hand away after touching one, but you would immediately go back, fighting through a slight finger burn, and pop a hot one in your mouth. My family was always amazed at my ability, even back then, to eat burning-hot things.
