I make this exactly the way my mom made it. It’s the same perfectly salty and sweet sandwich that fed me on so many mornings and helped make my taste buds the way they are today. I love you, mom.
A fun variation on this would be using our Fresh Blueberry Brioche. I think it would taste amazing with the egg and butter and brown sugar. Or for a savory version, substitute 1 tbsp grated Parmesan for the brown sugar and serve it with a little mustard. B
