This dish was inspired by my mom’s Spider-Man Eggs. When we were kids, my brother wouldn’t eat anything Spider-Man wouldn’t eat, so according to my mother, this was Spider-Man’s favorite breakfast. It consisted of toasted buttered white bread cubes tossed with smashed soft-boiled eggs and lots of salt. Even now in our thirties, my brother and I still go to our mom’s house sometimes and ask for Spider-Man Eggs.
