If you’re going to bake something that requires a cheezy topping, say, manicotti, this is your simple go-to melty mozz. It cooks up creamy and delicious, with just enough nuance from a little nooch and miso but nothing overpowering.


  • 1 cup (120 g) whole unroasted cashews (if you don’t have a high-speed blender)
  • 2 tablespoons


In a blender, place all ingredients plus ¾ cup (180 ml) water and blend until completely smooth. Scrape down the sides with a rubber spatula to make sure you get everything.
