Beautiful mushrooms don’t require much work to turn them into an exquisite meal. In fact, the opposite is true: The less you do to them, the better and more succulent they taste. Olive oil, salt, pepper, and a nice hot grill are everything! When you throw the salad together, the mushrooms wilt the greens a bit and create something fancy all on their own. Choose hearty baby greens if you can find them, like baby chard and kale. They hold up really nicely.
