Split pea soup begs for something smoky and grilled eggplant is there for it! Don’t be fooled by the short ingredient list for the base recipe; yellow split peas have a unique flavor that is a little more savory than green, to my taste buds anyway. I also love the golden hue! If you want to go even simpler and forgo the eggplant, a little sprinkle of smoked paprika will do the trick. I use Japanese eggplants because they’re thinner than European varieties, and even more purple. The result i
