Obviously, scrambled tofu makes for a great breakfast; but have you ever considered having it for breakfast, lunch, dinner, and a midnight snack? What I’m saying is that it’s fast, convenient, and yummy as heck any time of day. And I probably make it more times a week than I can count. If you’ve never made it before, the idea is to get the tofu nice and seared but still moist and mouthwatering. The texture should resemble scrambled eggs but about a thousand times better.
