An everyday Turkish dish, with the authentic taste of small-town and roadside restaurants and kebab-houses all over Anatolia.

As there is little else to this soup, it should be based on a good broth. Ideally, boil a whole chicken for 2 hours in about 4 pints of water with an onion stuck with cloves, a peeled carrot, a stick of celery, a bay leaf, some parsley stalks and black pepperco
