Salmon with Cucumber and Dill

  • quantities for 12 oz skinned and filleted fish
  • freshly squeezed juice of 2 limes


Finely dice the salmon. Season with some of the lime juice, salt and pepper and a tiny scraping of finely grated lime zest. This mixture does not need to be left marinating for more than a minute or two. The ingredients take their effect almost immediately.

Finely dice the cucumber and stir in just enough yoghurt to give it a pearly sheen. Season very lightly and add a slug of lime juic
