  • 4 oz short-grain pudding rice
  • 1 pint water
  • 18 fl

Method

Wash rice and bring to the boil in the water in a heavy pan. Turn down heat and boil gently, stirring from time to time to prevent sticking, until rice is soft and all the water has evaporated.

Add the milk and bring back to the boil. Cook gently until the mixture thickens slightly, then add the sugar. Continue cooking and stirring until the sugar has dissolved and the texture is a litt
