The Turkish equivalent of summer pudding, this only works with sour Morello cherries. They also flavoured one of the Ottoman court’s favourite sherbets, or fruit crushes, which has now become a popular soft drink, marketed all over Turkey in little brown bottles labelled vişne suyu and relished by snooty tourists as an alternative to coca cola. In contrast, this pudding is rarely found outside the home, except in one or two of Istanbul’s grander restaurants.
