  • 2 lb lean pork meat – cut into bite-sized cubes
  • 6 tablespoons soy sauce
  • 6

Method

Sprinkle pork cubes with the soy sauce and vinegar in a pottery, glass or stainless steel bowl and leave to marinate for an hour.

Heat the oil in a large, heavy, lidded saucepan or fire-proof casserole. Add the garlic and stir for a minute or two, then spoon in the meat. Turn this in the oil until it has lost its raw look, but do not let it brown. Add the pepper, potatoes, remain
