Indonesians love offal, and sate Padang is well known as a dish that combines tripe, heart, spleen, intestines and kidneys, and more, all cooked together in the sauce and served with compressed rice or lontong. For my recipe, however, I am going to be very choosy, and use only tripe, ox tongue and heart.
