A Popular Chicken Dish

This chicken dish intrigued me, because I saw it advertised in restaurants all over Sumatra. I was told that pop is short for populer – and indeed there are many popular chicken dishes in Indonesia. After trying this one in several restaurants I realized that although it looked like a nice boiled chicken it was always rather oily. When I asked for the recipe, I saw it had been fried, and this too is typical; most Indonesian chickens end up in the frying pan. Many locally famous fried
