Ingredients: 2 tbsp groundnut oil; For ikan bakar rica, I suggest 1 red snapper or 2 tilapia weighing altogether about 1.5 kg/3–3½ lb (in Indonesia, we usually use ikan mas or gurami); 2 tbsp lime juice; For ayam rica rica and ayam bakar rica, you need a free-range chicken weighing about 1.7 kg/3½–4 lb; 2 large red tomatoes, skinned, de-seeded and sliced; More lime juice and salt; 2 tsp chopped ginger; 4 cloves garlic, chopped; 4 tbsp chopped spring onions/scallions; 5 shallots or 1 onion, chopped; 112 g/4 oz/1½ cups canned chopped tomatoes (only for chicken); 1 tsp salt; 3–5 large red chillies, de-seeded and chopped

This can be made with chicken – ayam rica rica; or with fish – ikan rica rica. The three recipes below are ayam rica rica, ayam bakar rica and ikan bakar rica. (Remember the letter c is pronounced ch as in chilli.)
