This sambal goreng is good for vegetarians and vegans. It is included here principally, however, as an accompaniment to gudeg, in places where krecek and sambal goreng krecek are not available.

The tofu used here must be fried tofu, available in Chinese or other Oriental shops. You can, of course, fry fresh tofu yourself.
