I think the best sweet potato fritters we ever had were the ones Ibu Ratulangi made for us in Tomohon. She filled them with sugar for breakfast, and with cheese as tea-time snacks. Her name for them, the local name in Tomohon and elsewhere in North Sulawesi, is tai kuda, which literally means ‘horse droppings’. In Ambon they have something very similar, slightly different in shape, and shallow-fried instead of deep-fried, called uli patatas. Buah jingah is the name given to these fritters b
