Like sambal ulek, this can be bought in jars. In London, most sambals are imported from the Netherlands, still labelled with the old spelling, in this case sambal badjak.
Stored in an airtight jar, and in the fridge, it will stay good for 2–3 weeks. If you find you still have some left over, remember that this is one of the sambals suitable for making nasi goreng.
