This side-dish is not highly spiced, but it is savoury and crunchy and equally good either on the dinner table or as an appetizer to be served with drinks.
Stir-fry the peanuts in the oil in a wok or frying pan in three batches, for 4 minutes each time. Remove them with a slotted spoon and drain them in a colander or on absorbent paper. Use the same oil to stir-fry the dried anchovies in three batches, for 3–4 minutes each time. Drain these in the same way. Allow peanuts and anchovies to go cold, then mix them well together.
