Mango and Cabbage Acar

A cabbage acar without mango is sold in jars in the Netherlands, labelled, in the old spelling as usual, atjar. This Dutch product is often available in Britain, in large delicatessens or supermarkets. I like it with sour green unripe mangoes, available in the West in ethnic street markets or in Indian and Thai shops. They are quite small; if you can’t get them, substitute hard green apples, such as Granny Smiths.
