Nasi gurih, also known as nasi uduk, is rice cooked in coconut milk. Coloured with turmeric, it becomes nasi kuning (see next recipe). In Indonesia, we do not always soak the rice first, nor do we stir-fry it in oil or butter. However, the method I suggest here will appeal to people in the West, because it ensures that the rice does not become too soft and clingy.
