  • 2 cups long-grain rice
  • 2 cups good stock, or 2 cups


Soak the rice for 1 hour, wash, and drain. Heat the oil or butter in a saucepan and sauté the rice for 2 minutes. Add the turmeric, sauté for another 2 minutes, and then put in the stock and all the other ingredients. Boil until all the stock has been soaked up by the rice; then steam, or continue cooking, exactly as for Method 1.
