This is a Sundanese dish which I used to eat often when I went to stay with one of my aunts who lived in Tasikmalaya, a pretty little town in West Java. Most of the households there have their own balong, large fish ponds where they farm fish and shrimps for their own use. This Pais is an excellent way to cook small freshwater shrimps. I have also tried making it with frozen ‘cocktail’ prawns, which are generally easy to get anywhere, and it is not at all bad. It is better still if y
