This is usually made with ox liver, but lamb liver is a good substitute.

Ingredients

  • 700 g ( lb) ox liver
  • 2 tbs white vinegar

Method

Clean the liver by soaking it for about 20 minutes in a bowl of cold water with the 2 tablespoonfuls of white vinegar. Then cut it into small slices about 1 cm (½″) thick.
