  • 2 medium-sized aubergines
  • 1 large onion
  • 2 tsp paprika


Cut each aubergine into six, lengthwise, and then cut each piece across into two. Sprinkle with salt and let stand for 30 minutes; then wash, drain and dry.

Slice the onion finely. In a heavy frying-pan, heat about 5 tablespoonfuls of oil. Fry the aubergines carefully, five or six slices at
