  • 2 medium-sized aubergines
  • 1 onion
  • 2 cloves garlic

Method

Wash the aubergines and cut them into halves; then cut each half lengthwise into four. Sprinkle these with a little salt and let them stand for half an hour. Slice the onion. Peel, seed and chop the tomatoes. Sauté the sliced onions in the oil for 1 minute, add the crushed garlic and the aubergines; then lower the flame, and turn the aubergines several times.
