Labu is a general name for plants of the squash family, including pumpkins and musk melons. In this recipe from West Sumatra, however, we are concerned with a plant which is related to the squashes. It is sometimes called labu Siam, or Siamese pumpkin; the Sundanese of West Java call it gambas; in South America, where it originated, and the West Indies it is choco or chayote.
