This is a Sundanese recipe—that is to say, it comes from West Java. The combination of vegetables varies somewhat from place to place, but the ones that you will come across most often are listed here. French beans may be used instead of the first ingredient—the difference is not great. But the small round eggplants, although not exclusive to South-East Asia, are not so easy to find elsewhere and do not really have a substitute.
