The batter is exactly the same as for an ordinary pancake, and if you make 300 ml (½ pint) of it you will need the following quantities for the filling:


  • 120 g (4 oz) desiccated coconut or ½ a fresh young coconut


In Indonesia we would also add a little of the fragrant leaf known as daun pandan, but this is not essential. If you use fresh coconut, remember as usual to take off the brown rind before you start grating it.

Put the water and sugar in a saucepan, bring to the boil, and stir until the sugar is dissolved. Add the coconut and the other ingredients—but not the lemon juice. Simmer u
