Seasoned bamboo shoots are also delicious in ramen and as a snack. If you don’t have chashu braising liquid, you can use the same marinade as the Japanese-Style Soy Sauce Eggs.
Ingredients
½cup (60g) sliced bamboo shoots, rinsed (fresh, or from a can or package)
Combine the bamboo shoots, chashu braising liquid and mirin in a medium saucepan. Add water as needed to cover the bamboo. Bring to a boil over medium-high heat and add the bonito flakes if using. Reduce the heat and simmer for 30 minutes.
Remove from the heat and let cool. Transfer the menma and marinade into an airtight container and refrigerate ov
