Seasoned bamboo shoots are also delicious in ramen and as a snack. If you don’t have chashu braising liquid, you can use the same marinade as the Japanese-Style Soy Sauce Eggs.

  1. Combine the bamboo shoots, chashu braising liquid and mirin in a medium saucepan. Add water as needed to cover the bamboo. Bring to a boil over medium-high heat and add the bonito flakes if using. Reduce the heat and simmer for 30 minutes.
