Often, it makes sense to cook the vegetables and protein together in one pot. Some vegetables are quick-cooking and can be added after the meat is done pressure cooking. Other vegetables are sturdier and can be added at the beginning or halfway through cooking. Here are some tips:

Method

  1. Before you start cooking, decide if you’re O.K. with slightly mushy vegetables or if you really want them crisp-tender.
  2. If you can, cut the meat as thin as possible and the vegetables as thick and large as possible so that cooking times line up.
