Vietnamese Garlic Butter Noodles

When I lived in Northern California, I heard rumors about the famous recipes prepared in the secret kitchen of the An family’s Vietnamese restaurant, Thanh Long. One of these famed recipes was garlic butter noodles, often served with their also legendary roasted garlic crab. I never ate there, but this is my rendition that I’ve conjured based on info culled from the blogosphere.
