This hearty Korean dish can be made with beef or pork short ribs. Using the Instant Pot® makes quick work of this normally slow-cooked dish. Leaving out the parboiling and searing steps doesn’t sacrifice any flavor, but if you don’t like it too oily, you might want to parboil the meat first.

Ingredients

  • 2 pounds (900 g) beef short ribs
  • 1 kiwi or half an Asian pear, peeled and pureed as

  1. Trim the short ribs of extra fat. Massage them with the kiwi puree and brown sugar.
  2. Place the short ribs, onion, carrot, daikon and mushrooms in the pot. Pour the sauce over and stir to mix well. During cooking, the meat and vegetables will release their juices so you don’t need to add more water.
