Teriyaki chicken is brightened up with some lemon juice for a sweet-tart take on this Japanese favorite. Chicken thighs are tastiest, but swap them out for chicken breasts if you prefer. Find small thighs to fit in one layer in the 6-quart Instant Pot®.

Method

  1. Whisk together the granulated and brown sugars, garlic, ginger, soy sauce and lemon juice in the pot. Coat both sides of the chicken in the sauce and nestle skin side up in one layer. It might be a tight fit, but you can do it!
  2. Lock the lid. Select PRESSURE COOK/MANUAL and set to HIGH for 9 minutes. Make sure the steam release valve is sealed. Once pressurized (10
