My husband jokes that when we go out for dim sum with my family, he has to prepare himself for the “battle of the chopsticks.” If you aren’t quick with your chopsticks, you’ll be left with nothing to eat. One of my favorite dim sum dishes is tiny pork ribs steamed with black bean sauce. Ask your butcher to cut up the ribs for you.

Ingredients

Method

  1. Mix together the black bean sauce, cooking wine, soy sauce, garlic, ginger, sesame oil and sugar in a large bowl. Add the pork and toss to coat. Refrigerate for at least 30 minutes.
