While champorado is usually made with a glutinous rice called malagkit, I use short-grain Japanese sushi rice or arborio, depending on what I have in my pantry. In a pinch, you can even use jasmine or basmati rice.

  1. Stir together the rice, milk, water, cinnamon and salt in the pot.
  2. Lock the lid. Select PRESSURE COOK/MANUAL and set to HIGH for 20 minutes. Make sure the steam release valve is sealed. Once pressurized (12 to 15 minutes), the cook cycle will start.
  3. When the timer beeps, let the pressure release naturally for 10 minutes. Then quick release any remaining
